Ingredients

- 1 (15.25 ounce) package white cake mix
- 1/4 cup flour
- 1 1/2 teaspoons homemade or store-bought pumpkin pie spice
- 1/2 cup 100 percent pure pumpkin
- 10 tablespoons butter, melted
- 1/4 cup packed brown sugar
- 2 eggs
- CINNAMON CREAM CHEESE FROSTING
- 1 (8-ounce) package regular or reduced-fat cream cheese, softened
- 1/4 cup (1/2 stick) butter, softened
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 2 cups confectioners’ sugar
- In a medium bowl, combine cream cheese, butter, cinnamon, and vanilla. Beat with an electric mixer until creamy. Gradually beat in confectioners’ sugar.
Instructions
- Preheat oven to 350 degrees. In a large bowl, combine cake mix, flour, and pumpkin pie spice. In a medium bowl, whisk together pumpkin, butter, brown sugar, and eggs. Add to cake mix mixture; stir with a wooden spoon until well combined. Drop by heaping teaspoons 2 inches apart on ungreased cookie sheets. Bake until centers are almost set, 8 to 10 minutes. Cool 2 minutes before removing to a wire rack. Cool completely; frost with Cinnamon Cream Cheese Frosting. Sprinkle with pumpkin pie spice, if desired. Makes 4 dozen cookies.
