- 2 1/3 cups all-purpose flour, divided
- 1/2 cup confectioners’ sugar, plus more for sifting over top
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) cold butter, cut into pieces
- 4 eggs
- 1 1/2 cups sugar
- 3/4 cup fresh lemon juice
- 1 teaspoon finely grated lemon zest
Instructions
- Preheat oven to 350 degrees. In a large bowl, combine 2 cups flour, 1/2 cup confectioners’ sugar, and salt. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse crumbs. Pat mixture evenly into the bottom of a 9x13-inch baking pan. Bake until edges are golden, 20 to 22 minutes.
- Meanwhile, in a large bowl, whisk together eggs, sugar, lemon juice, and lemon zest. Add the remaining 1/3 cup flour; whisk until combined. Pour over hot crust. Reduce oven temperature to 300 degrees; bake until set, 30 to 35 minutes. Cool completely on a wire rack. Refrigerate until thoroughly chilled, about 2 hours. Sift confectioners’ sugar over top. Cut into bars. Makes 32 bars.
