- Nonstick cooking spray
- 1/2 cup (1 stick) butter, melted
- 3 tablespoons vegetable oil
- 1 1/3 cups sugar
- 2 eggs
- 1 tablespoon brewed coffee
- 1 1/2 teaspoons vanilla
- 3/4 cup flour
- 3/4 cup unsweetened cocoa powder
Instructions
- Preheat oven to 350 degrees. Line an 8x8-inch square baking pan with foil, letting ends extend beyond edges on 2 sides. Coat foil with nonstick cooking spray. In a large bowl, whisk together butter, vegetable oil, and sugar. Add eggs, coffee, and vanilla; whisk to combine. Add flour and cocoa powder; stir until smooth. Spread into prepared pan. Bake until a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Cool completely on a wire rack. Remove brownies by lifting foil ends; peel off foil. Place on a cutting board and cut into squares. Makes 16 brownies.
