- Vegetable shortening, for pans
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon ground allspice
- 1/2 teaspoon baking powder
- 3 eggs, slightly beaten
- 1 1/2 cups sugar
- 1 cup applesauce
- 1/2 cup (1 stick) butter, melted
- 3 tablespoons vegetable oil
- 2 medium apples, peeled, cored, and shredded
- Confectioners' sugar (optional)
Instructions
- Preheat oven to 350 degrees. Grease the bottoms of two 8x4-inch loaf pans with shortening. In a large bowl, combine flour, baking soda, cinnamon, salt, allspice, and baking powder. In a medium bowl, whisk together eggs, sugar, applesauce, butter, and oil. Add to flour mixture; stir just until moistened. Stir in apples. Divide batter between prepared pans. Bake until a toothpick inserted in centers comes out clean, 50 to 55 minutes. Cool in pans 10 minutes before removing to a wire rack. Cool completely. Sprinkle with confectioners’ sugar, if desired. Makes 2 medium loaves.
